Best Spring Salads

Spring is in the air, which means there is no better time to enjoy fresh produce from our local markets, veggie patches and community gardens. What better way to celebrate than enjoying some of these delicious salads.

Chickpea Salad with Tomato and Basil 

100g chickpeas (tinned)
Handful of fresh basil chopped
1Garlic clove finely chopped
1 tablespoon of Apple cider vinegar
½ tablespoon honey
1 cup cherry tomatoes 
Drizzle of teaspoons olive oil
Pinch of salt and pepper

  1. Place all ingredients in a large bowl and toss
  2. Cover and place in the fridge for 30 minutes

Chinese Cabbage and Noodle Salad with Tahini Dressing 

3 cups Chinese cabbage finely sliced
1 packet Konjac noodles
5 spring onions finely sliced
1 tablespoon sesame seeds
Juice of 1 lemon
2 tablespoons tahini
  1. Prepare Konjac noodles to the packet instructions
  2. In a large bowl mix cabbage, konjac noodles, spring onions and sesame
  3. In a separate small bowl combine the lemon juice and tahini and mix
  4. Drizzle over salad ingredients and mix well to ensure cabbage is well coated
  5. Make more dressing if needed

Shredded Brussel Sprout Salad

 

1 avocado, cubed
400g Brussels sprouts
1 Tablespoon slivered almonds
2 spring onions finely sliced
2 tablespoons sultanas finely chopped
Juice ½ a lemon
2 tablespoons extra virgin olive oil
Pinch of Salt and pepper

  1. Remove Stem of Brussels sprouts and finely slice
  2. In a large bowl combine Brussels sprouts, avocado, spring onions, almonds and sultanas
  3. In a separate small bowl, combine the lemon juice, olive oil salt and pepper
  4. Our dressing over salad ingredients
