Healthy Tortilla Wraps

You can still enjoy all the flavours of your favourite homemade Mexican burrito without the tortilla! This recipe is great for those days where you crave an energy dense Mexican meal but don’t want those nasty calories from your tortilla.  Did you know that tortillas contain approximately 100 calories, per tortilla, and that’s not including the meat filling!  Substituting your tortilla with a large lettuce leaf is a great idea for anyone trying to restrict refined foods and calories in their diet.  These small changes, over time can make a difference.

Here is a fantastic recipe for amazing lettuce leaf tortillas.

Ingredients:

600grams of turkey mince

1 tsp garlic powder

1 tsp salt

1 tsp cumin

1 tsp cayenne pepper         

1 tsp paprika

½ tsp oregano

1 onion, diced

1 capsicum, cored and diced

1 small can chopped tomatoes

¾ cup water

1 iceberg lettuce (leave ripped to form tortillas)

½ light tasty cheese

 

Method:

  1. Brown Turkey Mince in a large pan breaking apart with large spoon. Cook until all browned.
  2. Add garlic, salt, pepper, paprika and oregano to the turkey mince and cook.
  3. Add onion, capsicum, water and tinned tomatoes, stir into the mixture and cover to simmer for 20 minutes.
  4. Add this delicious mixture to your lettuce tortillas and sprinkle with tasty cheese.
