Enjoy this beautiful guilt free summer salad!
2 Cups of kale (leaves only)
1 small zucchini
2 tablespoons of extra-virgin olive oil
1 tablespoon of apple cider vinegar
1 teaspoon of honey (or molasses or male syrup)
1 pinch Himalayan pink salt and ground pepper
¼ cup crumbled gorgonzola
¼ cup toasted cashews
1/ Slice zucchini with a vegetable peeler to make zucchini ribbons.
2/ Grill zucchini ribbons on a grill over medium heat. Coat the grill with cooking spray. And grill till grill lines appear, one side only. Set aside.
3/ In a small bowl whisk the oil, vinegar, honey, salt and pepper.
4/ In a large bowl toss together the kale, zucchini ribbons and dressing.
5/ Transfer onto a serving plate and sprinkle over the gorgonzola and toasted nuts.
