Nut Butter Banana Sandwich

Ingredients

  • 1 banana – sliced lengthways
  • 1 tablespoon of nut butter
  • Raw honey
  • I tablespoon of chopped raw nuts
  • 1 teaspoon of desiccated coconut

Method

  1. Spread nut butter over one of the banana slices and top with honey.
  2. Sprinkle over nuts and coconut and press the banana slices back together.

Banana and Walnut Muffins

Makes 20

Ingredients

  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 teaspoons ground cinnamon
  • 8 eggs
  • 4 mashed bananas
  • 1 cup of maple syrup
  • 1 cup walnuts
  • Spray on coconut oil
  • 5 tablespoons Coconut oil
  • 1 vanilla bean – scraped
  • 1 teaspoon nutmeg

Method

  1. In a bowl combine flour, baking soda and powder, cinnamon, nuts, salt and nutmeg.
  2. In another bowl whisk the eggs then add the banana, coconut oil, maple syrup, and vanilla and mix until combine well.
  3. Add the two separate bowls together until thoroughly mixed.
  4. Meanwhile, preheat an oven to 180-200 degrees and spray a muffin tin with the coconut oil.
  5. Spoon the mixture into the muffin tins, not completely filing them, but just over half way.
  6. Bake in the oven for about 15 – 20 minutes, you can check by inserting a wooden skewer into the middle of one of the muffins and if it comes out clean they’re ready.
  7. Allow for them to completely cool, slide out of the tin and enjoy.

Banana Pancakes

Ingredients

  • 3 ripe large bananas - mashed
  • 4 eggs
  • ½ teaspoon of baking powder
  • 1 tablespoon of maple syrup

Method

  1. Crack eggs into a bowl and whisk, add in the baking powder while whisking.
  2. Add the banana and stir to thoroughly combine.
  3. In a non stick frying pan on the stove over low – medium heat, pour in a small amount of the mixture to make a pancake about the side of a fried egg.
  4. Cook for about a minute or 2, flip and cook for a further minute.
  5. Repeat until all mixture is used.
  6. Make into a pancake stack and top with maple syrup.

Banana Smoothie

Ingredients

  • 1 ½ cup almond milk
  • 2 Medjool dates
  • 1 banana
  • 2 ice cubes
  • 3 cashews
  • 1 teaspoon honey
  • Pinch salt

Method

  1. Combine all in a blender and blitz until smooth.
  2. Enjoy

 

Banana Overnight Oats 

Serves 2

Ingredients

  • ½ cup steel cut oats
  • 2 ripe bananas - sliced
  • 1 cup nut milk
  • ½ teaspoon of coconut oil
  • 1 vanilla pod scraped
  • Pinch of ground cinnamon
  • 1 tablespoon of maple syrup
  • 1 teaspoon of ground flax

Method

  1. In a saucepan melt the coconut oil and add most of the bananas, vanilla and cinnamon and stir with a wooden spoon cooking on medium for about 2 and a half minutes.
  2. Add the maple syrup while stirring then remove from heat.
  3. Combine oats, milk and flax then add to the two jars.
  4. Top with the banana mixture, stir and place left over banana on top and put in the fridge overnight.
