Banana Breakfast Ideas
Nut Butter Banana Sandwich
Ingredients
- 1 banana – sliced lengthways
- 1 tablespoon of nut butter
- Raw honey
- I tablespoon of chopped raw nuts
- 1 teaspoon of desiccated coconut
Method
- Spread nut butter over one of the banana slices and top with honey.
- Sprinkle over nuts and coconut and press the banana slices back together.
Banana and Walnut Muffins
Makes 20
Ingredients
- 1 cup coconut flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 2 teaspoons ground cinnamon
- 8 eggs
- 4 mashed bananas
- 1 cup of maple syrup
- 1 cup walnuts
- Spray on coconut oil
- 5 tablespoons Coconut oil
- 1 vanilla bean – scraped
- 1 teaspoon nutmeg
Method
- In a bowl combine flour, baking soda and powder, cinnamon, nuts, salt and nutmeg.
- In another bowl whisk the eggs then add the banana, coconut oil, maple syrup, and vanilla and mix until combine well.
- Add the two separate bowls together until thoroughly mixed.
- Meanwhile, preheat an oven to 180-200 degrees and spray a muffin tin with the coconut oil.
- Spoon the mixture into the muffin tins, not completely filing them, but just over half way.
- Bake in the oven for about 15 – 20 minutes, you can check by inserting a wooden skewer into the middle of one of the muffins and if it comes out clean they’re ready.
- Allow for them to completely cool, slide out of the tin and enjoy.
Banana Pancakes
Ingredients
- 3 ripe large bananas - mashed
- 4 eggs
- ½ teaspoon of baking powder
- 1 tablespoon of maple syrup
Method
- Crack eggs into a bowl and whisk, add in the baking powder while whisking.
- Add the banana and stir to thoroughly combine.
- In a non stick frying pan on the stove over low – medium heat, pour in a small amount of the mixture to make a pancake about the side of a fried egg.
- Cook for about a minute or 2, flip and cook for a further minute.
- Repeat until all mixture is used.
- Make into a pancake stack and top with maple syrup.
Banana Smoothie
Ingredients
- 1 ½ cup almond milk
- 2 Medjool dates
- 1 banana
- 2 ice cubes
- 3 cashews
- 1 teaspoon honey
- Pinch salt
Method
- Combine all in a blender and blitz until smooth.
- Enjoy
Banana Overnight Oats
Serves 2
Ingredients
- ½ cup steel cut oats
- 2 ripe bananas - sliced
- 1 cup nut milk
- ½ teaspoon of coconut oil
- 1 vanilla pod scraped
- Pinch of ground cinnamon
- 1 tablespoon of maple syrup
- 1 teaspoon of ground flax
Method
- In a saucepan melt the coconut oil and add most of the bananas, vanilla and cinnamon and stir with a wooden spoon cooking on medium for about 2 and a half minutes.
- Add the maple syrup while stirring then remove from heat.
- Combine oats, milk and flax then add to the two jars.
- Top with the banana mixture, stir and place left over banana on top and put in the fridge overnight.
