This guacamole inspired salsa is perfect for summer afternoon nibbles and drinks with your favourite people.
Avocado Feta Salsa
2 roma tomatoes, seeded and diced
1 ripe avocado, diced
¼ red onion, finely chopped
1 clove garlic, minced
2 tablespoons chopped oregano
2 tablespoons olive oil
2 tablespoons red wine vinegar
120g of crumbled feta
1/ Mix the tomato, avocado and red onion in a medium bowl.
2/ Add the herbs, olive oil and vinegar
3/ Stir together gently
4/ Stir in the feta cheese
5/ Serve with crisp flat bread or corn chips
