Healthy Yoghurt Bark

Ingredients:

2 cups Greek yoghurt (2% fat)
4 tbsp. of honey
1 cup coarsely chopped pistachios
1 ¼ cup fresh sliced strawberries
1 punnet fresh raspberries
½ cup desiccated coconut

Method:

1/ Combine honey and yoghurt
2/ Pour the yoghurt mixture onto a lined baking tray and spread out evenly using a silicon spatula
3/ Sprinkle pistachios, strawberries, raspberries and desiccated coconut evenly on the yoghurt
4/ Place in freezer until frozen (over night is ok)
5/ Remove from freezer and let rest for 5 minutes then break into rough pieces
6/ Place the pieces in a airtight container and leave in the freezer and eat as you please

 

 

Healthy Mango Ice Cream

 

Ingredients:

1 mango

1 banana

2 tablespoons honey

2 egg yolks

300 ml coconut cream

pinch of salt

1 teaspoon vanilla extract

 

Method:

1/ Whisk egg yolks and honey in a heatproof bowl over a medium saucepan of simmering water, and whisk until doubled in size
2/Pour contents into a blender and add the remaining ingredients, blitz for 30 seconds and pour into a container to freeze
3/ Stir with a fork every hour for 4 hours, then continue to freeze overnight. When ready allow ice cream to thaw then serve with fresh fruit!
