Summer Pea, Watermelon & Quinoa Salad


1 cup quinoa (cooked per packet instructions)

1 cup sugar snap peas

1 cup watermelon, cubed

1 cup fresh flat-leaf parsley, roughly chopped

Pinch of salt and pepper



  1. Cook quinoa to packet instructions and leave aside to cool
  2. Blanch sugar snap peas
  3. Combine quinoa, sugar snap peas, parsley and watermelon in a large bowl
  4. Add salt and black pepper and toss gently to serve.
