1 large banana (mashed)
½ cup buckwheat flour
1 teaspoon baking powder
1 egg (this may be omitted, just add an extra ½ cup of nut milk – vegan alternative)
3/4 cup nut milk
3 tablespoons chia seeds
1 tablespoon maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon coconut oil
Serve with – Extra sliced banana and maple syrup.
1. Combine all ingredients, besides maple syrup and coconut oil, mixing well.
2. In a frying pan greased with coconut oil, spoon in approximately 1/3 cup of the mixture at a time.
3. Cook for 1 minute or until the mixture starts to bubble, flip and cook for an additional minute.
4. Serve topped with banana slices and a drizzle of maple syrup.
