Here is a recipe for delicious coconut and banana over night oats. You can make this recipe the night before and eat as a quick, delicious and healthy breakfast the next day. This recipe serves two.
1 ripe banana
1 cup rolled oats
1 cup coconut milk
1 tbsp maple syrup
½ tsp cinnamon
¼ cup organic desiccated coconut
- In a bowl mix the oats, coconut milk, cinnamon, mashed banana and desiccated coconut. If you prefer a bit sweeter add the maple syrup.
- Transfer into airtight container and let sit in the fridge over night.
- Serve the next morning by placing he mixture into two mason jars or bowls.
- You can enjoy this breakfast hot, cold or room temp.
