Coconut Banana Overnight Oats

Here is a recipe for delicious coconut and banana over night oats.  You can make this recipe the night before and eat as a quick, delicious and healthy breakfast the next day.  This recipe serves two.

Ingredients:

1 ripe banana

1 cup rolled oats

1 cup coconut milk

1 tbsp maple syrup

½ tsp cinnamon

¼ cup organic desiccated coconut

Method:

  1. In a bowl mix the oats, coconut milk, cinnamon, mashed banana and desiccated coconut. If you prefer a bit sweeter add the maple syrup.
  2. Transfer into airtight container and let sit in the fridge over night.
  3. Serve the next morning by placing he mixture into two mason jars or bowls.
  4. You can enjoy this breakfast hot, cold or room temp.
