Yoghurt Bark

Yoghurt Bark is a fantastic healthy snack that can be completely customisable.   You can add your favourite fruits, nuts, seeds and you have the perfect healthy snack.  You can eat your yoghurt bark on the go as a healthy addition to breakfast or even enjoy as a dessert alternative.  


2 cups Greek yoghurt (2% fat)

4 tbsp. of honey

1 cup coarsely chopped pistachios

1 ¼ cup fresh sliced strawberries

1 punnet fresh raspberries

½ cup desiccated coconut


1/ Combine honey and yoghurt

2/ Pour the yoghurt mixture onto a lined baking tray and spread out evenly using a silicon spatula

3/ Sprinkle pistachios, strawberries, raspberries and desiccated coconut evenly on the yoghurt

4/ Place in freezer until frozen (over night is ok)

5/ Remove from freezer and let rest for 5 minutes then break into rough pieces

6/ Place the pieces in a airtight container and leave in the freezer and eat as you please
