Minty watermelon popsicle recipe

Ingredients

1 Watermelon cut into chunks

1/3 bunch mint leaves

1 cup of coconut water

 

Rolling Pin

Popsicle mold

Popsicle sticks

 

Method

1/ Add watermelon to blender and blitz and the coconut water/water until the desired consistency.

2/ pick the mint leaves from the bunch and roughly chop, roll over with a rolling pin to release the essential oils and aroma

3/ Stir the mint through the mixture

4/ Pour into molds

5/ Place into freezer, after an hour add the sticks

6/ Leave to freeze over night
