3 Amazing Kale Recipes

Kale Pesto

Ingredients –

  • 100grams Kale – stems removed
  • 100grams Pine Nuts
  • 3 Cloves of Garlic – peeled
  • 175ml of Olive Oil
  • Good pinch of salt and pepper

Method –

  1. Blend all ingredients together in a blender or food processor and serve with a healthy pasta, zuchinni noodles, as a dip/spread on sandwiches, meat or fish, dressing on salads or with eggs.


Garlic and Chilli Kale

Ingredients –

  • 2 bunches of Kale – stems removed
  • 1 tablespoon of Olive Oil
  • 3 tablespoons of Water
  • 1 long red chilli – deseeded and finally chopped.
  • 2 cloves garlic – minced
  • Pinch of salt and pepper
  • ¼ lemon

Method –

  • Heat the oil in a wok, add the kale, sprinkle over water and sauté for a few minutes and season with salt and pepper.
  • Add the garlic and chilli and cook for a little longer.
  • When finished, squeeze over a little lemon and serve as a side.


Kale, Freekeh and Broad Bean Salad

Ingredients –

  1. 1 cup of Freekeh – cooked per packet instructions
  2. 1 cup of Broad Beans – blanched and peeled
  3. ½ cup of goats feta
  4. ½ cup of slithered almonds
  5. 1 bunch of kale – stems removed, roughly chopped
  6. 1 tablespoon of mint – shredded
  7. 1 tablespoon of Olive Oil
  8. 3 tablespoons of Water
  9. Pinch of salt and pepper

Method –

  1. In a wok, heat the olive oil and sauté the kale for a few minutes, adding the water.
  2. In a large bowl, toss together the Freekeh, broad beans, feta, almonds, kale and mint, sprinkle with salt and pepper and serve.
