Low Calorie Lunch Idea
Healthy Mediterranean Quinoa Salad
This is the perfect light and healthy lunch that will actually keep you full and satisfied till dinner!
Ingredients
Dressing:
3 tablespoons lemon juice
2 tablespoons red wine vinegar
½ tablespoon olive oil
Pinch of oregano
Salad:
1 cup quinoa cooked
2 cups spinach
1 capsicum diced
10 cherry tomatoes, halved
10 kalamata olives, pitted and sliced
¼ cup fetta cheese
Method:
1/ Whisk all dressing ingredients together in a bowl and set aside.
2/ In a large bowl, combine quinoa, spinach and half of dressing, mix well.
3/ Add the capsicum, tomatoes, olives and remainder of dressing and mix well.
4/ Fold the fetta into the salad, you can eat straight away or store in the fridge for later.
