Coconut Chia Pudding


1 nashi pear – sliced

1⁄4 cup plain organic greek yoghurt or coconut yoghurt

1⁄4 cup protein powder

1⁄2 cup chia seeds

Zest of 1⁄4 lemon

1⁄4 cup coconut flakes

1⁄4 cup water


  1. Soak chia seeds in 1⁄4 cup of water overnight.
  2. Stir in coconut and protein powder, then microwave for 30 seconds.
  3. Add yoghurt and stir well.
  4. Arrange pear slices on top with lemon zest and serve.
